A method of making melt-controlled cheese and a melt-controlled cheese are described. The method includes mixing a curd produced by adding acid to hot milk and a curd product by rennet coagulation. A cheese with taste and texture similar to natural cheese but with desirable melting properties is produced.

Une méthode permettant de fabriquer un fromage fondu contrôlé et ledit fromage fondu contrôlé sont présentés. La méthode consiste à mélanger un caillé produit en ajoutant un acide à du lait chaud et un caillé produit par coagulum-présure. Un fromage dont le goût et la texture sont semblables au fromage naturel, mais dont les propriétés fondantes sont idéales est ainsi produit.
