Melt crystallized xylitol possesses an agglomerated crystalline structure under a scanning electron microscope; an increased surface area rela- tive to aqueous crystallized xylitol, of at least about 0.12 square meters per gram; and unexpected hardness valuaa when compressed into a tablet, Chewing gum compositions comprising such melt crystal- lized xylitol are much less tacky and gritty compared to gum compositions comprising equal proportions of conventional aqueous crystallized xylitol of similar particle size distribution.
