ABSTRACT: For the shelling of crustaceans, e.g. shrimps or krill, the preboiled crustaceans are reheated at short duration to a temperature, at which the body liquid just inside the shells is slightly below the boiling temperature, whereafter the crustaceans are subjected to a sudden pressure drop, such that the liquid just inside the shell boils up. With the shells thus loosened the crustaceans are caused to be moved rapidly against the surface of a water bath, whereby the loosened shells are drawn of the bodies. The product in the water bath is separated, and partly shelled crustaceans may be recirculated for renewed treatment.
