The invention provides a method for continuous heat sterilization of liquid which continuously carries out a pre-heating step of preheating the liquid, a final heating step of heating the preheated liquid to reach a predetermined sterilizing temperature, a holding step of holding the liquid which has reached the sterilizing temperature for a predetermined period of time and a cooling step of cooling the held liquid, wherein said final heating step comprises the following steps (a) and (b): (a) a step of continuously pressurizing the liquid by a high pressure pump; and (b) a step of releasing the liquid continuously to a normal pressure within a time period of less than seconds after the pressurizing step to thereby make the liquid reach the predetermined sterilizing temperature, and an apparatus for automatically carrying out the method. According to the continuous heat sterilization method and apparatus, scorch in the final heating step is dispensed with and accordingly, a long period of time of continuous operation is feasible, further, denaturation of liquid caused by heating is inconsiderable, the investment cost and the running cost become inexpensive and a large amount of liquid can be processed.
L'invention concerne un procédé qui permet de stériliser thermiquement en continu un liquide et qui comprend une étape de préchauffage continu permettant de préchauffer un liquide, une étape de chauffage final permettant de chauffer le liquide préchauffé jusqu'à une température de stérilisation prédéterminée, une étape de maintien permettant de maintenir le liquide à la température de stérilisation pendant une durée prédéterminée et une étape de refroidissement permettant de refroidir le liquide ainsi maintenu. L'étape de chauffage final comprend les étapes suivantes: a) mise sous pression continue du liquide par une pompe haute pression, et b) détente continue du liquide jusqu'à une pression normale en moins de 10 secondes après la mise sous pression, ce qui fait monter la température du liquide jusqu'à la température de stérilisation prédéterminée. L'invention concerne également un dispositif permettant de mettre en oeuvre automatiquement ledit procédé. Comme celui-ci ne comporte pas de combustion durant l'étape de chauffage final, il peut être mis en oeuvre en continu sur une longue durée. En outre, du fait que le chauffage final n'entraîne pas de dénaturation notable du liquide, le coût de l'investissement et le coût de l'utilisation sont peu élevés et le liquide peut être traité en masse.
