A method and an apparatus are provided for cooking and spray-drying a starch. In this method, the starch is uniformly and simultaneously atomized and cooked in the presence of an aqueous medium by means of a single atomization step carried out in an apparatus comprising a two-fluid, internal-mix spray-drying nozzle, coupled to a means for drying the cooked, atomized starch. Uniformly pregelatinized, cold-water-swelling starch with desirable textural, visual and organoleptic properties is advantageously provided by this method and apparatus.
Méthode et appareil pour la cuisson et le séchage par pulvérisation d'un amidon. Par cette méthode, l'amidon est pulvérisé et cuit uniformément et simultanément en milieu aqueux au moyen d'une simple étape de pulvérisation dans un appareil comprenant une buse de pulvérisation-séchage à mélange interne de deux fluides, associée à un dispositif de séchage de l'amidon cuit et pulvérisé. Cette méthode et cet appareil permettent l'obtention d'un amidon uniformément prégélatinisé qui gonfle à l'eau froide possédant des propriétés textiles, visuelles et organoleptiques recherchées.
