A method and apparatus for making a shaped confectionery product of Bingham plastic rheology by cold extrusion wherein particles of the confectionery product are fed between counter- rotating form rolls having depressions corresponding to the desired product shape. The particles are compacted and compressed between the form rolls and fuse together to exit with a thin web of material interconnecting the shaped confectionery product. The release of the product from the roll surface is aided by induced differential motion between the rolls.

L'invention concerne un procédé et un appareil permettant de concevoir un produit de confiserie modelé par l'intermédiaire de la rhéologie des plastiques de Bingham par extrusion à froid. Des particules du produit de confiserie sont acheminées entre des rouleaux de modelage contrarotatifs présentant des dépressions correspondants à la forme que l'on souhaite donner au produit. Les particules sont compactées et comprimées entre les rouleaux de modelage et fusionnent ensemble pour sortir dotées d'une bande fine de matières interconnectant le produit de confiserie formé. La libération du produit de la surface du rouleau est assistée par un déplacement différentiel induit entre les rouleaux.
