The invention pertains to an apparatus for gutting fish which serves for preventing flaws that reduce the quality e.g., colon and blood residues or damage to the walls of the abdominal cavity, and for attaining a highly aesthetic product. The invention proposes that the rectum is initially supported by inserting an element through the anus in order to separate the rectum within the region of the anus, and that the lateral and dorsal connections between the rectum and the abdominal walls are subsequently separated.

Cette invention concerne un appareil permettant de vider des poissons qui évite d'endommager le poisson et par conséquent de réduire la qualité du poisson, qui élimine les restes de côlon et de sang ou qui évite d'abîmer les parois de la cavité abdominale et ce, pour obtenir un produit ayant un aspect hautement esthétique. Le procédé se déroule de la manière suivante: on introduit un élément dans l'anus pour supporter initialement le rectum et séparer ainsi ce dernier dans la région de l'anus puis on sépare ensuite les jonctions latérales et dorsales entre le rectum et les parois abdominales.
