ABSTRACT OF THE DISCLOSURE A method of making confectioneries, particularly hard and soft caramel and jelly and gum products, is disclosed. The method involves combining regulated quantities of the ingredients of a confectionery to be manufactured and mixing admitted into the mass of ingredients so as to directly heat the same for cooking of the ingredients. The mixing operation is carried out with rotary elements which rotate at speeds between 1500 and 3000 revolutions per minute. If necessary, the mass of ingredients is demoisturized after cooking so as to obtain the desired moisture content for the confectionery being manufactured. The direct heating of the mass of ingredients with steam improves the thermal efficiency of the method. Moreover, the admixture of water with the ingredients of the confectionery, which must be effected at the beginning of the manufacturing operation in the prior art, may be eliminated in the disclosed method in as much as the condensate from the steam may serve in lieu of this water. The high speed with which the rotary elements used for the mixing operation rotate in the disclosed method -2- provides the advantage that improved homogeneity is achieved The disclosed method may be carried out in an arrangement which includes a chamber for cooking the ingredients of the confectionery. Inlets are provided for the introduction of steam into the chamber. One or more rotary elements are accommodated in the chamber and are driven by a mechanism which is capable of causing them to rotate at a minimum rotational speed of 1500 revolutions per minute.
