ABSTRACT Apparatus for mixing dough comprises a dough mixer chamber which has a lid. The chamber is associated with a flour hopper and also provided with a conduit for oxygen-enriched air, a water inlet, and a vent pipe. In operation of the chamber, dough is agitated by agitator and a valve in the conduit for oxygen-enriched air is opened for chosen intervals of time to allow oxygen-enriched air to be passed into the chamber. During chosen time periods a valve in the water inlet is opened to enable at least that part of the conduit for oxygen-enriched air proximate the chamber to be flushed with water. MW/NJP/8617 USA
