ABSTRACT A method and apparatus for preserving foodstuffs, more especially bakery goods, ready-cooked dishes and the like, whereby the foodstuffs immediately after baking or cooking, thus also oven-hot, are cooled in an apparatus having an evaporator and a heating device until reaching a core temperature in which the liquid of the goods is turned into a solid form (ice), and then stored more deeply frozen until the foodstuffs are to be used and are then thawed out and heated, in which the pre-adjustable thawing out and heating occurs without heating means and only by switching off the evaporator until about -9° C core temperature of the goods is achieved in the same apparatus and without having to handle the goods, whereupon a further heating to from 30° and 60° C, core temperature of the goods occurs with artificial heat and with at least occasional moisture supply, whereby at least before removal of the goods a drying period is provided.
