A method for producing a reconstitutable dehydrated food product and an apparatus for producing such a product are described. The methods calls for the use of a stationary vessel that is used as both a hydration device and a pressure cooker. A rotating member within the vessel ensures that the vessel contents are continuously mixed, and that fluids within the vessel are continuously spread through the contents. The apparatus also comprises a channel, wherein the food product is chopped and sized as desired, before going through a forming conduit that spreads the product into a generally flat sheet of texturized composition. The method and apparatus produce a dehydrated food product of a desired texture, with improved water absorption qualities and enhanced digestibility.
L'invention concerne un procédé et un dispositif permettant d'obtenir un produit alimentaire déshydraté reconstituable. Le procédé fait intervenir un récipient fixe utilisé comme dispositif d'hydratation et comme autocuiseur. Un élément rotatif situé à l'intérieur dudit récipient permet de mélanger les substances contenues dans ce récipient et d'y disperser les fluides de manière continue. Ce dispositif comprend également un canal dans lequel le produit alimentaire est coupé en morceaux et dimensionné selon une taille souhaitée avant de traverser un conduit de formage destiné à étaler ledit produit en une feuille généralement plane de composition texturée. Ce procédé et ce dispositif permettent d'obtenir un produit alimentaire déshydraté présentant une texture souhaitée, des propriétés d'absorption d'eau améliorées et une digestibilité accrue.
