A method and apparatus for coagulating a coextruded collagen gel on a sausage strand by removing residual brine from the strand (14) after coagulation by passing the elongated sausage strand through an aperture (28) of a flexible diaphragm (30) having a diameter equal to that of the strand.
L'invention concerne un procédé et un appareil permettant de faire coaguler un gel de collagène extrudé sur un cordon de saucisse. Dans lesdits procédé et appareil, on élimine la saumure résiduelle du cordon (14) après coagulation en faisant passer le cordon de saucisse allongé par une ouverture (28) pratiquée dans une membrane (30) flexible de même diamètre que le cordon.
