A method of removing the skin casing from a sausage by slitting the sausage (2) in its one end region comprises the steps that a flap of the skin casing is gripped by a gripper (15) in the immediate proximity of the slit. The gripped flap is displaced in relation to the sausage (2) in a direction transversely of the longitudinal direction of the sausage, preferably approximately tangential. The gripper and the sausage undergo a relative displacement in the longitudinal direction of the sausage. The sausage will, at least during a part of the removal operation of the skin casing, be caused to rotate approximately about its longitudinal axis. An apparatus for removing the skin casing from a sausage comprises a support arrangement (1) for the sausage, a rotation unit (6), which, by engagement with the sausage (2), is disposed to rotate the sausage approximately about its longitudinal axis on the support arrangement, a gripping unit (3) which has a knife for realising a slit in the end region of the sausage, and at least one first gripper for gripping a flap of the skin casing in the immediate proximity of the slit. The apparatus also includes guides (4, 5) along which the rotation unit (6) and the gripping unit (3) for removing the skin casing of the sausage are movable in opposite directions approximately parallel with the longitudinal direction of the sausage.
La présente invention concerne un procédé pour enlever la peau d'une saucisse en fendant la saucisse (2) au voisinage d'une extrémité. Ce procédé comprend la saisie, par un organe de préhension (15), d'une partie de la peau à proximité immédiate de la fente. La partie saisie est déplacée, par rapport à la saucisse (2), dans une direction perpendiculaire à la direction longitudinale de la saucisse, de préférence à peu près tangentielle. L'organe de préhension et la saucisse subissent un déplacement relatif dans la direction longitudinale de la saucisse. Au moins pendant une partie de l'opération d'enlèvement, la saucisse est mise en rotation approximativement autour de son axe longitudinal. Un appareil destiné à ôter la peau d'une saucisse comprend un support (1) pour la saucisse; une unité de rotation (6) qui, en agissant sur la saucisse (2), est conçue pour la faire tourner approximativement autour de son axe longitudinal sur le support; une unité de saisie (3) pourvue d'une lame pour pratiquer une fente dans la partie terminale de la saucisse, et au moins un premier organe de préhension qui sert à saisir une partie de la peau de saucisse, au voisinage immédiat de la fente. L'appareil comprend aussi des guidages (4, 5) le long desquels l'unité de rotation (6) et l'unité de préhension (3), servant à ôter la peau de la saucisse, peuvent être déplacées dans des sens opposés approximativement parallèles à la direction longitudinale de la saucisse.
