A method and an apparatus are provided for the preparation of hot beverages by infusion of flavour containing particles such as tea leaves. The apparatus comprises at least two sources of water maintained at different temperatures, an infusion chamber receiving a substantially conforming filter basket, a warm-up chamber, a control panel, a controller and a plurality of fluid controlling valves. After placing flavour containing particles into the filter basket and inserting said filter basket into the infusion chamber, determination of an infusion temperature and infusion time combination can be made from selection made through the control panel to initiate automatic preparation of a hot beverage, under control of the controller which operates the valves according to signals provided by a plurality of temperature and fluid level sensors. In an alternate embodiment of the invention, infusion and warm-up are performed in a single chamber and the filter basket is automatically moved in or out of operating position to respectively start or stop the infusion process.
