A method and apparatus for killing microorganisms on the surface of raw meat. The microorganisms are killed by exposing the meat to controlled applications of a biocidal treatment gas in a vacuum/pressure regulated environment. The meat is first exposed to a vacuum, the surface then flushed with an air-free treatment gas, then full treated with the air-free treatment gas, and then reexposed to a vacuum. The method and apparatus successfully kills microorganisms on the surface and pores of raw meat without causing significant deleterious changes to the meat.

L'invention porte sur une méthode et un appareil pour tuer les micro-organismes sur la surface de la viande crue. Les micro-organismes sont tués par des applications contrôlées, sur la viande, d'un gaz de traitement biocide dans un milieu sous vide où la pression est régulée. La viande est d'abord exposée dans un milieu à vide, ensuite la surface de la viande est nettoyée au moyen d'un gaz de traitement exempt d'ai,r puis réexposée dans un milieu à vide. La méthode et l'appareil permettent de tuer les micro-organismes sur la surface et dans les pores de la viande crue sans apporter des changements délétères importants à la viande.
