A method of producing a pasta filata cheese product, such as a Mozzarella-type cheese, in a continuous process without emulsifier or pH regulator additives requires preparing a typical pasta filata-type cheese curd and supplying the curd in cut pieces to one end of a processing chamber (14). The chamber (14) has an agitator (18) which rotates to work, knead, stretch and move the curd through the chamber. At the same time, steam is injected into the curd in the chamber through a plurality of injection nozzles (23) spaced along the length of the chamber (14) to heat and cook the cheese while it is simultaneously mechanically worked. The cooked product exiting from the chamber (14) is moulded to a desired shape.

L'invention concerne un procédé permettant de produire un produit de fromage à pâte molle et à caillé plastique, tel qu'un fromage du type mozzarella, selon un procédé continu sans émulsifiant ou additifs de régulateur de pH, qui consiste à préparer une crème de fromage du type pâte à cuire et caillé plastique et à fournir la crème en morceaux coupés à une extrémité de chambre de traitement (14). Ladite chambre (14) comprend un agitateur (18) qui tourne afin de travailler, de pétrir, d'étirer et de déplacer la crème dans la chambre. On injecte simultanément de la vapeur dans la crème placée dans la chambre, via une pluralité de buses d'injection (23) espacées sur la longueur de ladite chambre (14) afin de chauffer et de cuire le fromage pendant qu'il est simultanément soumis à un travail mécanique. Le produit cuit sortant de la chambre (14) est moulé selon une forme désirée.
