The invention relates to the control of a vat containing oil or cooking fat that undergoes a plurality of heating cycles, whereby a capacitive probe is disposed in an area of the vat that is adapted for immersion in said oil or cooking fat, whereby the dielectric gap thereof is taken up by a portion of the oil or cooking fat and an initialization procedure is triggered (E2) after the vat has been filled with said liquid (E1), whereby a measurement is made of the initial value of a characteristic representing the dielectric constant of said liquid in heating conditions and a retirement criterion is established, whereby the measurement of said characteristic is repeatedly detected during the course of successive heating cycles and a retirement procedure (E6) is triggered when the retirement criterion is detected (E4) as being met.

Pour le contrôle d'une cuve de friture contenant un bain d'huile ou de graisse de friture destiné à suivre une pluralité de cycles de chauffe: on dispose dans une zone de la cuve adaptée à être immergée dans le bain une sonde capacitive dont l'espace diélectrique est constitué par une portion dudit bain, et, aprés remplissage (E1) de la cuve avec ce bain, on déclenche une procédure d'initialisation (E2) au cours de laquelle on mesure une valeur initiale d'une caractéristique représentative de la constante diélectrique de ce bain en conditions de chauffe, et on fixe un critère de mise hors service; on détecte (E3), de manière répétée au cours des cycles de chauffe suivants, une mesure de cette caractéristique et on déclenche (E6) une procédure de mise hors service lorsqu'il est détecté (E4) que le critère de mise hors service est satisfait.
