The invention relates to a method and a device for cooking and vacuum packing mussels with their shells and other foodstuffs by microwave heating so that they can be stored as chilled or frozen goods for an extended period. When mussels are vacuum packed, many of the shells often break, and moreover the subsequent cooking in water is too slow for the mussel meat to coagulate satisfactorily. The invention solves this problem by packing the product to be preserved, in the first place mussels, in a somewhat flexible plastic container which is sealed. On the top side of the container there is a venting hole which permits the escape of steam during boiling but which is sealed immediately as microwave heating ceases, whereupon a vacuum arises inside the container as the steam condenses. A vacuum packed and pasteurised product is thus obtained in one and the same operation.

La présente invention concerne un procédé et un dispositif permettant de cuire et d'emballer sous vide des moules et leurs coquilles ainsi que d'autres produits alimentaires par un chauffage par micro-ondes de façon à pouvoir les stocker comme semi-conserves ou comme aliments surgelés pendant une période prolongée. Quand on emballe sous vide les moules, de nombreuses coquilles se cassent souvent, et de plus, la cuisson qui suit dans l'eau est trop lente pour que la chair des moules puisse coaguler correctement. La solution apportée à ce problème par l'invention consiste à emballer le produit à conserver, tout d'abord les moules, dans un récipient en plastique un tantinet souple qui est hermétiquement fermé. Sur le côté supérieur du récipient, il y a un trou de mise à l'atmosphère qui permet à la vapeur de s'échapper pendant l'ébullition, mais qui se referme immédiatement dès que cesse le chauffage micro-ondes, ce qui fait qu'il se crée un vide à l'intérieur du récipient pendant la condensation de la vapeur. En l'occurrence, une seule et même opération aboutit à la production d'un produit emballé sous vide et pasteurisé.
