The present invention relates to a method for preparing a beverage such as espresso coffee, which consists in feeding pressurized hot water through a coffee powder tablet; blocking, downstream of the tablet, the extracted liquid that has passed through the tablet; producing a removable plug by means of said extracted liquid; causing an increase in pressure downstream of the tablet to increase the hot water pressurization inside the tablet; and reaching a removal pressure adapted to remove the removable plug, with subsequent dispensing of the extracted liquid at a dispensing pressure that is lower than the removal pressure to cause a decompression of the hot water inside the tablet.
