The proposal is for a process and device for popping foodstuffs, especially cereals and pulses, in which the product is placed in a container (36) into which a pressurised (pi) heat-conducting agent (84) is introduced from outside. After the agent (84) has been flowing into the container (36) for a given time and shortly before the container (36) is opened, a product-free region behind the product (32) looked at in the direction of extraction (89) of the product (32) is subjected to an additional higher pressure (p2), thus creating a "propellant".

L'invention propose un procédé et un dispositif pour l'éclatement de denrées alimentaires, notamment de céréales et de légumineuses, ledit procédé consistant à mettre le produit dans un récipient (36) dans lequel on introduit un agent provenant de l'extérieur, conducteur de chaleur et sous pression (p1). Au bout d'un certain temps d'afflux de l'agent (84) dans le récipient (36) et peu avant l'ouverture du récipient, on applique une nouvelle pression plus élevée (p2) à une zone dépourvue de produit (44) située à l'arrière du produit (32), vu dans le sens d'évacuation (89) du produit (32), ce qui crée un "propulseur".
