The present invention relates to a method for brewing bottom fermented beer, such method comprising the use of cereal bran, preferably wheat or rye bran, at a ratio of 15% to 50% of the grist. The method of the present invention allows the brewing of beers having an excellent taste and taste stability during ageing at a comparatively low raw material cost.
La présente invention concerne un procédé pour brasser de la bière de fermentation basse, un tel procédé comprenant l'utilisation de son de céréale, de préférence de son de blé ou de seigle, en proportion de 15 % à 50 % de la mouture de malt. Le procédé de la présente invention permet le brassage de bières ayant un excellent goût et une excellente stabilité du goût au cours du vieillissement à un coût de matière première relativement faible.
