Abstract of the Disclosure A method for coloring fish flesh. An aqueous solu- tion of a food dye is introduced into the flesh by injection via an array of a plurality of hypodermic needles. The flesh containing the injected dye is aged for a period of at least about two days thereby allowing the dye to diffuse through the flesh and produce a substantially even hue therethroughout.
