A collagen processing method for thickening or hardening the collagen sufficiently, by application of a liquid smoke fraction obtained from a liquid smoke derivative (a derivative being commercially available as Code V), so that the resultant treated collagen is useful as a casing for a food product. The liquid smoke fraction may be obtained by treating Code V with both carbon and a pH adjustment whereby the method is without an effect on the taste of the food product. In another embodiment, the Code V is only pH adjusted.

L'invention concerne un procédé de traitement au collagène permettant d'épaissir et de durcir suffisamment le collagène par l'application d'une fraction de fumée liquide obtenue à partir d'un dérivé de fumée liquide (dérivé commercialisé sous Code V) de manière que le collagène traité obtenu soit utilisé comme enveloppe de produit alimentaire. On obtient la fraction de fumée liquide en traitant le Code V avec du carbone et en ajustant le pH. Ce procédé n'affecte pas le goût du produit alimentaire. Selon une autre variante, on ajuste uniquement le pH du Code V.
