ABSTRACT Green coffee beans are contacted with a caffeine- deficient water extract of green coffee. This aqueous solution extracts caffeine from the green coffee beans during the con- tact period and the caffeine-containing solution is then con- tacted with particles of a high surface area, non-ionogenic, macroreticular, water-insoluble cross-linked polymer of polymerizable ethylenically unsaturated molecules. The polymer adsorbs caffeine from the aqueous solution and there is produced a caffeine-deficient water extract of green coffee solubles which is then used to contact caffeine-containing green coffee beans.
