A method of determining whether a brine composition for freezing an item is in a desired balance. The method includes: adding an effective amount of dye into the brine composition, cooling the dye composition to a pre-determined temperature, and comparing the color of the brine composition to a pre- established correlation of color and brine composition at the pre-determined temperature, thereby determining whether the brine composition is in the desired balance.

L'invention concerne un procédé permettant de déterminer si une composition à base de saumure destinée à la congélation d'un élément présente un équilibre désiré. Ce procédé consiste à ajouter une quantité utile de colorant dans la composition à base de saumure, à refroidir la composition colorante à une température prédéterminée, puis à comparer la couleur de la composition à base de saumure à une corrélation préalablement établie entre la couleur et la composition à base de saumure à une température prédéterminée, afin de déterminer si la composition à base de saumure présente l'équilibre désiré.
