27691-8 ABSTRACT A method of determining properties of meat by measuring light reflective properties thereof. The method comprises measuring reflective values at various points along a scanning line using, for example, an optical probe inserted into the meat which can measure light in different wavelength regions or different discrete wavelengths. The output measurements from the probe are obtained as a series of whole numbers and a determina- tion is made as to the number of occurrences of each whole number. The values thus obtained are used as variables to calculate the value for the property of the meat.
