The invention concerns a method for eliminating for eliminating non-hydratable phospholipids and/or polyvalent metals from a fatty substance, consisting in a step of mixing the fatty substance with a monosodium or polysodium polycarboxylic acid solution, the mixture being produced by pouring the aqueous solution into the fatty substance in the form of fine droplets or in micellar form. The aqueous solution advantageously also contains an electrolyte derived form a monovalent cation. Ethylenediaminetetraacetic (EDTA) salt is the preferred carboxylic salt which acts as complexing agent.

L'invention concerne un procédé d'élimination de phospholipides non hydratables et/ou d'élimination de métaux polyvalents à partir d'un corps gras. Le procédé comprend l'étape de mélange du corps gras avec une solution aqueuse d'un sel d'acide polycarboxylique, mono ou polysodique, le mélange étant réalisé sous forme de fines goutelettes ou sous forme micellaire de ladite solution aqueuse dans le corps gras. La solution aqueuse comprend avantageusement également un électrolyte dérivé d'un cation monovalent. Le sel d'EDTA est le sel d'acide polycarboxylique préféré qui joue le rôle d'agent complexant.
