A method of evaluating the physical strength of the skin of raw barley for malt production. Barley grains with skins are placed in a sulfuric acid solution of about 40 to 60% concentration and stirred by means of a stirrer bar, etc. for a given period of time (for example, about 1 hr). After the completion of stirring, the barley grains are treated with a liquid mixture of methylene blue and eosin, and the degree of skin peeling (degree of residue) is assessed on the basis of staining degree. Thus, the physical strength of the skin of raw barley is evaluated.
Cette invention a trait à un procédé d'évaluation de la résistance physique de la peau de l'orge brute aux fins de la production de malt. On place les grains d'orge ayant encore leur peau dans une solution d'acide sulfurique dont la concentration est comprise entre 40 et 60 % et on agite cette solution au moyen d'un agitateur, etc., pendant une certaine durée, (par exemple, pendant une heure environ). Après agitation, on traite les grains avec un mélange de bleu de méthylène et d'éosine et l'on évalue le degré de pelage (taux de résidus) d'après le degré de coloration. Il est, de la sorte, possible d'évaluer la résistance physique de la peau de l'orge brute.
