Le procédé de préparation de la matrice protéique permet d'obtenir une matrice protéique stable sur le plan physique et chimique, gonflant peu, exempte de lixivation et présentant une activité élevée et de bonnes propriétés de résistance mécanique. Le procédé consiste à réticuler et à faire durcir le mélange protéique et à utiliser un moule, aux fins de formation d'une protéine présentant une forme et des dimensions souhaitées.
