Disclosed is a method for producing a glycoside of a flavonoid, which comprises the step of reacting the flavonoid and a sugar donor with an enzymatic agent having a glycosylation activity and derived from a bacterium belonging to the genus Trichoderma (preferably Trichoderma viride or Trichoderma reesei). The flavonoid includes catechin or a methylated form thereof. The sugar donor includes a saccharide having a maltotriose residue (preferably maltotriose, maltotetraose, maltopentaose, maltohexaose, maltoheptaose, dextrin, .gamma.-cyclodextrin or a soluble starch). The glycoside produced by the method is highly soluble in water, is improved in taste, and has increased stability. Also disclosed is a novel catechin glycoside produced by the method.
La présente invention concerne un procédé de glycosylation de flavonoïde consistant à faire réagir le flavonoïde et un donneur de sucre avec un agent enzymatique qui présente une activité de glycosylation et qui est dérivé d'une bactérie appartenant au genre Trichoderma (de préférence Trichoderma viride ouTrichoderma reesei). Le flavonoïde comporte de la catéchine ou l'une de ses formes méthylées. Le donneur de sucre inclut un saccharide portant un reste maltotriose (de préférence maltotriose, maltotétraose, maltopentaose, maltohexaose, maltoheptaose, dextrine, .gamma.-cyclodextrine ou amidon soluble). Le glycoside ainsi obtenu est hautement soluble dans l'eau, est meilleur au goût, et est plus stable. L'invention concerne également un nouveau glycoside de catéchine produit selon le procédé.
