The product (3) is heated, being taken to a desired temperature, a temperature-holding stage is carried out, the vapour being allowed to escape, a gaseous fluid (F) is introduced into the pack at the end of this temperature-holding stage and the pack is closed totally.

On chauffe le produit (3) contenu dans la barquette en laissant la vapeur produite par le chauffage s'échapper par une ouverture (4A) de l'emballage. On chauffe le produit (3) en le portant à une température souhaitée, on réalise une étape de maintien à température en laissant la vapeur s'échapper, on introduit un fluide gazeux (F) dans l'emballage à la fin de cette étape de maintien à température et on ferme totalement l'emballage.
