Concerning a glycosyltransferase originating in a microorganism belonging to the family Vibrio, it is intended to provide an economical and convenient method whereby a sugar converting reaction can be efficiently carried out compared with the existing enzymatic reaction system. According to this method, an appropriate amount of NaCl is added to an enzymatic reaction system of a glycosyltransferase originating in a microorganism belonging to the family Vibrio (for example, .beta.-galactoside-.alpha.2,6-sialyl-transferase originating in Photobacterium damselae, .beta.-galactoside-.alpha.2,3-sialyl- transferase originating in Photobacterium phosphoreum or .beta.-galactoside- .alpha.2,3-sialyl-transferase originating in Vibrio sp.) and thus the enzymatic activity is elevated.

En ce qui concerne une glycosyltransférase provenant d'un microorganisme appartenant à la famille Vibrio, l'invention a pour objet un procédé économique et commode par lequel on peut effectuer une réaction de conversion de sucre de façon efficace par comparaison au système de réaction enzymatique existant. Selon ce procédé, on ajoute une quantité appropriée de NaCl à un système de réaction enzymatique d'une glycosyltransférase provenant d'un microorganisme appartenant à la famille Vibrio (par exemple la ß-galactoside-a2,6-sialyl-transférase provenant de Photobacterium damselae, la ß-galactoside-a2,3-sialyl-transférase provenant de Photobacterium phosphoreum ou la ß-galactoside-a2,3-sialyl-transférase provenant de l'espèce Vibrio sp.) et on élève ainsi l'activité enzymatique.
