The invention relates to a method for improving the exploitability and processability of guar endosperm. According to said method, guar splits are brought into contact with liquid ammonia at an initial pressure which is higher than the atmospheric pressure and at a temperature of at least 25 °C, whereby the amount of liquid ammonia is sufficient to moisten at least the surface of the guar splits and the remaining available guar split/liquid ammonia system volume is increased in an explosion-like manner by reducing the pressure by approximately 5 bars, resulting in the sheath of the guar-splits being torn open. Said ammonia-exploded guar splits can be ground more easily than native guar splits.
L'invention concerne un procédé permettant d'améliorer l'exploitabilité et l'ouvrabilité d'endosperme de guar, selon lequel des fractions d'endosperme de guar sont mises en contact avec de l'ammoniac liquide, à une pression de départ supérieure à la pression atmosphérique et à une température d'au moins 25 DEG C environ, la quantité d'ammoniac liquide étant suffisante pour au moins humidifier la surface des fractions d'endosperme de guar, et le volume restant disponible pour le système fractions d'endosperme de guar/ammoniac liquide est augmenté à la manière d'une explosion, par abaissement de la pression d'au moins environ 5 bars, ce qui entraîne un déchirement de l'enveloppe des fractions d'endosperme de guar. Ces fractions de guar explosées par ammoniac sont plus faciles à moudre que les fractions de guar natives.
