The present invention is related to the manufacture of a baked product with the product being enclosed in a wrapper. The product can be given good qualities including that desired surface portions of the product can be provided a crust similar to that achievable under open-pan baking conditions. The invention is implemented so that the dough is dosed up to the desired volume of the baked end product into the baking space formed by said sealed wrapper, subsequently raising and/or baking the dough in said baking space formed by said sealed wrapper. In the wrapper, the wrapper area overlying the crust-formation area of the baked product to be treated similarly as under open-pan baking conditions is separated from the baking atmosphere by means of a moisture-transmissive material capable of passing water vapour through its porous structure.

La présente invention porte sur la fabrication d'un produit de boulangerie, ce produit étant emballé dans un matériau enveloppant. Il est possible de conférer à ce produit de bonnes qualités de sorte que des parties désirées de sa surface puissent être dotées d'une croûte semblable à celle réalisée dans des conditions de cuisson à foyer ouvert. Selon cette invention, le procédé consiste à doser la pâte au volume désiré pour obtenir le produit final cuit dans l'espace de cuisson formé par le matériau enveloppant hermétique, puis à faire lever et/ou cuire la pâte dans cet espace de cuisson formé par le matériau enveloppant hermétique. Dans le matériau enveloppant, la zone, recouvrant la partie où se forme la croûte du produit cuit devant être traité de manière similaire aux conditions de cuisson à foyer ouvert, est séparée de l'atmosphère de cuisson au moyen d'un matériau transmettant l'humidité et pouvant faire passer la vapeur d'eau par sa structure poreuse.
