The invention concerns a method for liquefying bananas to obtain a pure juice, which consists in: peeling the bananas, ensuring that the pulp is separated from the peel while preserving the integrity of the fruit, heating the pulp with oxygen-free steam, so as to enable the fruits to be blanched and an exuded juice to be obtained, cooling the pulp, reducing the pulp into a mash, subjecting the pulp mash to an enzymatic hydrolysis reaction, then pressing it to extract the juice therefrom, subjecting at least part of the exuded juice to reduced pressure so as to cool it and extract therefrom a fraction of flavouring compounds by self-evaporation then condensation of the water and flavours contained therein, and mixing together the juice derived from pressing the pulp, the fraction of flavouring compounds and the cooled exuded juice to obtain said pure juice.

Procédé de liquéfaction de la banane en vue d'obtenir un pur-jus, dans lequel l'on épluche les bananes, en veillant à séparer la pulpe de la peau tout en préservant l'intégrité des fruits, l'on chauffe la pulpe à la vapeur et à l'abri de l'oxygène, de sorte à permettre le blanchiment des fruits et l'obtention d'un jus d'exsudation, on refroidit la pulpe, on réduit la pulpe en purée, l'on soumet la purée de pulpe à une réaction d'hydrolyse enzymatique, puis on la presse pour en extraire le jus, l'on soumet une partie au moins du jus d'exsudation à une pression réduite de sorte à le refroidir et en extraire une fraction de composés aromatiques par auto évaporation puis condensation de l'eau et des arômes qu'il contient, et l'on réunit le jus issu du pressage de la pulpe, la fraction de composés aromatiques et le jus d'exsudation refroidi pour obtenir ledit pur-jus.
