The invention concerns a method for obtaining a mixture of starch branching enzymes extracted from unicellular algae characterised in that it consists in modifying a unicellular algae such that it no longer expresses a starch debranching activity; in treating said modified unicellular algae so as to obtain a concentrated acellular extract; and in subjecting said concentrated acellular extract to molecular sieving so as to obtain a mixture of starch branching enzymes extracted from algae.

L'invention concerne un procédé d'obtention d'un mélange d'enzymes de branchement de l'amidon extraites d'algues unicellulaires caractérisé par le fait que l'on modifie une algue unicellulaire de manière à ce qu'elle n'exprime plus d'activité débranchante de l'amidon, traite cette algue unicellulaire modifiée de manière à obtenir un extrait a-cellulaire concentré, et effectue un tamisage moléculaire de cet extrait a-cellulaire concentré de manière à obtenir ledit mélange d'enzymes de branchement de l'amidon extraites d'algues.
