ABSTRACT The invention is directed to a method of preparing .alpha.-L-aspartyl-L-phenylalanine with high selectivity and high yield. Diffusion dialysis with an ion exchange membrane is used to decrease hydrochloric acid concentration of a mixed solution containing hydrochloric acid and at least one .alpha.-L- aspartyl-L-phenylalanine derivative, and to provide a dehydrochlorinated solution which is thereafter concentrated. A base is then added to the concentrated solution to neutral- ize same. Subsequently, .alpha.-L-aspartyl-L-phenylalanine is crystallized and isolated.
