ABSTRACT OF THE DISCLOSURE In a method for preparing bakers' yeast with the use of freeze tolerant Kluyveromyces thermotolerans FRI-501 (FERM BP-2243), a carbon source is added at a concentration accounting for 25 to 200% of the weight of yeast cells and the amount of aeration is reduced at the time of the starvation culture of said yeast.
