The present invention provides a method for preparing cheese products, and process cheese bases for use in the production of process cheese. The method generally comprises mixing one or more concentrated powders derived from milk with sodium chloride, milk fat, water, and, optionally, an edible acid and/or a preservative for a period of time sufficient to produce a well-mixed, homogeneous product, and cooling the resulting mixture for a time and at a temperature which is sufficient to allow the mixture to form a solid matrix. The solid matrix can be consumed, or can be used as a substitute for natural cheese and ground by a cheese grinding system during the production of process cheese. The present invention also provides cheese products and process cheese bases prepared according to this method, and to process cheeses produced with the process cheese bases.

La présente invention est une méthode pour la préparation de bases de produits fromagers ainsi que de fromage fondu à des fins d'utilisation dans la production de fromage fondu. La méthode consiste généralement à mélanger au moins une poudre concentrée dérivée du lait avec du chlorure de sodium, des matières grasses du lait, de l'eau et, de manière facultative, un acide comestible et/ou un agent de préservation pendant une durée suffisante pour produire un produit homogène, bien mélangé, puis à refroidir ce mélange pendant une durée et à une température propres à permettre au mélange de former une matrice solide. Cette matrice solide peut être consommée ou employée comme substitut au fromage naturel et râpée grâce à une râpe à fromage industrielle en cours de production de fromage fondu. La présente invention permet aussi d'obtenir des bases de produits fromagers et de fromage fondu préparées à l'aide de cette méthode, et de transformer les produits fromagers dérivés des bases de fromage fondu.
