Described is a method for selectively isolating tryptophan containing peptides from an aequeous peptide mixture, comprising the steps of: a) controlling the pH of the aequeous peptide mixture to 4,0-6,0, forming a precipitate of tryptophan containing peptides; and b) isolation of the precipitated peptides. The aequeous peptide mixture is preferably obtained by enzymatic cleavage at acidic pH of a protein source. Further, peptides having a Trp content of 8-15 w/w% and the use thereof as food additive and as active ingredient in a medicament are described.
La présente invention concerne une technique permettant d'isoler de manière sélective des peptides contenant du tryptophane d'un mélange peptidique aqueux. Cette technique consiste: a) à contrôler le pH de ce mélange peptidique aqueux entre 4,0 et 6,0, à former un précipité de peptides contenant du tryptophane et, b) à isoler ces peptides précipités. Le mélange peptidique aqueux est obtenu, de préférence par clivage enzymatique au pH acide d'une protéine source. Cette invention concerne aussi des peptides possédant un contenu en Trp de 8 à 15 w/w % et l'utilisation de ceux-ci comme additif alimentaire et comme principe actif d'un médicament.
