The invention relates to a method for preserving foodstuffs, in which the foodstuffs are heated in the moist state in a container (10), suitable for transport and storage with ventilation openings (20), for a defined period by microwave, for at least such a time as hot steam (D) forms in the container (10) and exits through the ventilation opening (20), whereby gas (G) is injected into the container (10) after the heating process for at least partial compensation of the pressure drop in the container (10).

L'invention concerne un procédé de conservation d'aliments consistant à chauffer les aliments à l'état humide au moyen de micro-ondes, dans un contenant (10) servant d'emballage de transport et de commercialisation, présentant une ouverture d'aération (20), jusqu'à ce que de la vapeur chaude (D) se forme dans le contenant (10) et s'échappe par l'ouverture d'aération (20). Pour compenser au moins partiellement la chute de pression dans le contenant (10), un gaz (G) est injecté selon l'invention dans le contenant (10) à la fin du chauffage.
