Methods for processing of killed crustaceans are provided herein. In one such method, an essential step of processing a killed crustacean include cutting the thorax of the killed crustacean. The anterior section of the crustacean is vacuum eviscerated through the cut thorax. The removal of the visceral contents of the crustacean is completed by the sole step of back-flushing the anterior section of the crustacean with water. the posterior section of the crustacean is vacuum eviscerated. The removal of the intestinal contents of the crustacean is completed by the sole step of back-flushing the posterior section of the crustacean with water. This provides an intact crustacean having intact raw edible crustacean meat in situ, in which the intact raw edible crustacean meat is not subject to visceral staining and/or the concentration of heavy-metal contaminants therein.
La présente invention concerne des procédés de traitement de crustacés morts. Dans un de ces procédés, une étape essentielle du traitement d'un crustacé mort consiste à découper le thorax de ce crustacé. La partie antérieure de ce crustacé est éviscérée par aspiration à travers le thorax découpé. La suppression de ce qui reste du contenu viscéral du crustacé est achevée par la seule étape de rinçage à l'eau de la partie antérieur du crustacé. La partie postérieure du crustacé est éviscérée par aspiration. La suppression de ce qui reste du contenu intestinal de ce crustacé est achevée par la seule étape de rinçage à l'eau de la partie postérieure de ce crustacé. On obtient un crustacé intact possédant une chair de crustacée comestible crue intacte, sur site, cette chair de crustacé comestible crue intacte n'étant pas souillée par les viscères et/ou par la concentration d'impuretés en métaux lourds présentes dans ces viscères.
