ABSTRACT OF THE DISCLOSURE Green salmon roe, whether it is very fresh or less than fresh, is salted under agitation in a saturated aqueous solu- tion of salt containing a nitrite and free from any precipitates, and is then dehydrated. The thus salted roe is immersed under agitation in a saturated aqueous solution of malate containing a nitrite and free from any precipitates. The thus processed roe is worked up in a conventional manner.
