The invention relates to a method for producing a shirred food casing covered by a tubular net and to a method for applying a net to the surface of a carrier casing. This method comprises steps wherein air or an inert gas is blown into the carrier casing, the carrier casing inflated/pressurised to become round is pulled in the direction of the net towards a pleating head attached to one end of the net, which is attached, at the open end thereof, to a clamp centralised with a shirring mandrel. Thus, the carrier casing is folded into the tubular net while pulling the net inside out over itself, whereafter the carrier casing is pulled through the pleating head to the shirring machine, where the pressure of air or an inert gas blown from inside of the shirring mandrel forces the areas of the carrier casing between the meshes of the net to form bulges. Finally, the net/carrier casing combination is shirred by the shirring machine.
L'invention concerne une méthode de production d'un boyau alimentaire froncé recouvert d'un filet tubulaire et une méthode pour appliquer un filet sur la surface d'un boyau de support. Cette méthode comprend les étapes suivantes : de l'air ou un gaz inerte est soufflé dans le boyau de support, ce dernier est gonflé ou pressurisé de façon à s'arrondir et est tiré dans la direction du filet vers une tête de plissage attachée à une extrémité du filet ; et cette tête est attachée, à son extrémité ouverte, à une pince centralisée avec un mandrin de fronçage. Ainsi, le boyau de support est plié dans le filet tubulaire tout en tirant le filet en le retournant sur lui-même ; le boyau de support est ensuite tiré à travers la tête de plissage jusqu'à la machine de fronçage, où la pression de l'air ou d'un gaz inerte soufflé depuis l'intérieur du mandrin de fronçage force les parties du boyau de support entre les mailles du filet de manière à former des bosses. Finalement, la combinaison de filet / boyau de support est froncée par la machine de fronçage.
