ABSTRACT OF THE DISCLOSURE There is described a method for producing an .alpha.-aspartylphenylalanine derivative of formula (2) Image wherein R1 and R2 represent hydrogen or an alkyl group having 1 to 4 carbon atoms. The method comprises reacting a .beta.-aspartylphenylalanine derivative of formula (1) Image with a basic compound in a solvent such as an alcohol, in the presence of an organic or inorganic metallic compound. This method enables to obtain extremely high yield and prevents the formation of undesirable .alpha.-aspartylphenylalanine anhydride derivatives.
