ABSTRACT OF THE DISCLOSURE Described is a method for producing a fruit preserves including the steps of immersing in a syrup a natural fruit previously washed with water, peeled and cored, and heating the fruit and the syrup by microwave heating for substituting water and air bubbles in the fruit pulp by the syrup while the fruit remains immersed in the syrup. Also described is a method for producing candied fruit additionally including the step of drying the fruit produced as described above.
