The invention relates to a method for producing conjugated linoleic acid whereby (a) conjugated linoleic acid low alkyl esters are hydrolysed with water in the presence of enzymes, while the alcohol is continuously removed, (b) the hydrolysate is separated into an organic phase and an aqueous/alcoholic phase, and (c) the organic phase containing the conjugated linoleic acid is liberated from non-reacted conjugated linoleic acid low alkyl esters.
L'invention concerne un procédé de production d'acide linoléique conjugué, selon lequel : (a) on hydrolyse des esters d'alkyle inférieur d'acide linoléique conjugués en présence d'enzymes, avec de l'eau, l'alcool étant extrait en continu ; (b) on divise l'hydrolysat en une phase organique et une phase hydro-alcoolique ; et (c) on libère la phase organique contenant l'acide linoléique conjugué des esters d'alkyle inférieur d'acide linoléique conjugué n'ayant pas réagi.
