The invention concerns a method for producing ethanol by enzymatic treatment of a starchy vegetable wort using yeast of the genus Saccharomyces, which consists in replacing all the old yeasts with fresh yeasts to maintain the duration of fermentation between 20 and 24 hours.

Dans ce procédé de production d'éthanol par traitement enzymatique d'un moût d'une matière végétale amylacée au moyen de levures du genre Saccharomyces, on remplace toutes les levures anciennes par des levures fraîches pour maintenir la durée de fermentation entre 20 et 24 heures.
