It is intended to provide a process for obtaining a hydrophobic glycyrrhiza extract which is useful in foods, food additives, foods with nutrient function claims, foods for specified health uses, foods with health claims, drinks, feeds, drugs, quasi drugs and so on and has excellent powder properties. Namely, a process for producing a hydrophobic glycyrrhiza extract characterized in that, in extracting glycyrrhiza with a water-soluble organic solvent, use is made of glycyrrhiza having bark at a ratio of 30% or more based on the total surface area thereof. A process for producing a hydrophobic glycyrrhiza extract characterized in that an extract of glycyrrhiza with a water-soluble organic solvent, which is obtained by extracting glycyrrhiza or a glycyrrhiza extract residue with the water-soluble organic solvent, is crystallized from a solvent mixture of water with a water-soluble organic solvent having a weight ratio of water/(water soluble organic solvent + water) of 1/3 or more.
L'invention porte sur un procédé de production d'un extrait hydrophobe de glycyrrhiza utilisable dans les aliments, les additifs pour aliments, les nutriments, les aliments à but thérapeutique précis, les aliments diététiques, les boissons, l'alimentation animale, les quasi-médicaments, etc., et se présentant en poudre de haute qualité. Ledit procédé consiste à extraire la glycyrrhiza au moyen d'un solvant organique hydrosoluble en utilisant de la glycyrrhiza à raison de 30 % ou plus d'écorce, en se basant sur sa surface totale, la glycyrrhiza étant cristallisée à partir d'un mélange d'eau et dudit solvant dans le rapport pondéral eau/eau + solvant de 1/3 ou plus.
