The invention relates to a method for producing recombinant trypsin from the pancreas of a pig which is soluble in Pichia pastoris and secreted into the culture medium, whereby expression at pH 3,0 - 4,0 substantially prevents activation of trypsinogen into .beta. trypsin and the autolysis of .beta. trypsin by trypsin into.isin. trypsin and from there into inactive peptides.
